Sweet Balsamic Roasted Pumpkins Seeds

Got Pumpkin Seeds?
My kids loved these!
If so, try out my Sweet Balsamic Roasted Pumpkin Seed recipe.
To prepare your pumpkin seeds - Rinse and strain your pumpkin seeds in a colander. Let  pumpkin seeds dry for 24 hours in a singer layer on a sheet of wax paper. If you're impatient like me...use a hair dryer to speed up the process!

2 cups of pumpkin seeds
mix the following....
2 Tablespoons of Brown Sugar
2 Tablespoons of Melted Butter
2 Tablespoons of Balsamic Vinegar or Balsamic Glaze
1 Tsp  of Kosher Salt
1/8 tsp Cinnamon
1/8 tsp fresh grated nutmeg

Preheat oven to 350 degrees
Combine all ingredients in a bowl and mix well. Toss in the pumkins seeds and coat evenly. Lightly coat cookie sheet with cooking spray. Pour seeds onto a cookie sheet and spread into a single layer.
Bake for 35-45 minutes. Check on them about every 10 minutes to make sure they don't burn!
Let cool and enjoy!
